Case Study - Bristol Royal Infirmary – Level 9
The Challenge
The staff restaurant was in urgent need of modernisation, having not been refurbished for over 10 years. The client approached us with a tight budget and deadline, along with some initial ideas to update the space and ensure it could function more effectively in line with their customers’ menu preferences.
The previous counter had been designed around a food service concept that no longer aligned with the menu or the needs of its customers. It lacked a hot food counter, and the refrigerated display had been out of order for several years. Overall, the setup offered little to no flexibility for the client and their menu offer or gave any capacity for menu changes day to day.


The Solution
We designed a bright, modern counter with the flexibility of mobile units, using Moffat Versicarte systems. This allows the team to offer both hot and cold menu options with ease. We also incorporated smart retail space at the front of the counter for snacks, fruit, and other grab-and-go items, while providing additional preparation space to support efficient service.
We began by creating initial design concepts, which were refined through consultation with the client. After incorporating their feedback, we produced detailed 3D visuals to give them a clear understanding of the final result. CPF Installations were commissioned to carry out the installation of the counter, along with additional tabling. The final design also included new fridges and potato ovens to enhance the overall functionality of the space.
The Results
The new counter has enabled the client to offer a full hot breakfast service in addition to the cold options previously available. Although only recently opened, the restaurant has already seen a 25% increase in breakfast uptake. To add variety and engage customers, they’ve also introduced themed lunch days — such as Nacho Thursday and Chilli Tuesday — bringing excitement and flexibility to the daily menu.
